Not much has been going on lately. Today marks day 23 of fasting. The countdown has begun.
It has been raining pretty steadily here.. not my favorite weather but it also means things are starting to bloom.
The kids just started their spring break and just because we can't go anywhere right now doesn't mean I am not planning the rest of the years trips.
A couple weekends ago we hosted an iftar (breaking of fast) party at our house and I made these delicious pistachio tiramisu. Very easy and super yummy.
M and I really liked these coconut clusters at Costco to use as granola but they no longer carry them and after trying a few other granola's and not loving them I decided to make my own. So easy.. why have I not been doing this all along?!
I used coconut flakes, pumpkin seeds, sunflowers seeds, ground chia seeds, ground flax seeds, pecans, cinnamon and steel cut oats. And bound the mixture using honey, vanilla and coconut oil.
In addition, to help us get through our Ramadan sehri's (morning meal) I made some super dense, protein loaded muffins.
I made a banana muffin base adding ground chia and flax seeds along with cottage cheese and instead of all purpose flour I used whole wheat flour. But since everyone wanted something different I added chopped strawberries and lemon curd to H's. Chocolate chips to D's and chocolate chips and walnuts to ours.
They are not light and fluffy, they are dense and very filling. I'll take them a step further and drizzle some peanut butter on them before eating them up. I also just started using silicone liners instead of paper and they are such a game changer and no more waste.

The pictures of the blooms are so beautiful, and the protein loaded muffins sound delicious! I would love to know the recipe! Are they egg and milk free? I think silicone liners are awesome too!

Your flowers are all beautiful! My daughter likes to use silicone liners, but when I'm baking muffins for home (especially when I'm planning to freeze some of them), I tend to just skip the liners period.

ReplyDeleteYour clusters sound interesting, I have a banna muffin recipe that I like with all natural stuff in it. Always fun to be planning the next trip you will take. Don't you just love this time of year with all the flowering trees. We had a few morning of frost that made ours look a little sad quicker than they normally would so that was a bummer. But others are blooming now so that is nice, won't be long and it will be time to plant our garden :)
