Soup for the Sick
Last weekend I had a sick husband on my hands... a sick husband who was living on soups. Instead of making a huge pot of one kind of soup and living on it (which M would hate) I took this as an opportunity to make soups.. hearty enough to fill me sick man's stomach and mine too..
The first is my favorite and one of my go to soups.. it is Sunny Anderson's Roasted Tomato Soup. This soup is rich, hearty and absolutely delicious. I add a green pepper to for an extra kick.
Soup number three is another favorite in our house.. Black Bean Tortilla Soup. I add a small can of corn and a spoon full of salsa to the mix. Sometimes even half a chicken breast depending on how hearty I want the soup to be. Mmm so good and easy too.
Our last soup of the weekend was a Classic Beef Noodle Soup. This was a slightly less easy soup to make and I was missing a few ingredients.. I had no idea what a Thai bird chili was or chili bean sauce. I used regular lite soya sauce instead of dark and used wheat spaghetti instead of udon noodles. I added a handful of bean sprouts. The result while good was just a tad salty.. but the bigger problem was that it was just too difficult to eat..

My second soup of the weekend was a Southern Chicken Corn Chowder. First time making this one and it was another winner.. i omitted the bacon bits and M and I are not a fan of celery.. but next I think I'd add a second jalapeno or a dash a paprika. We like a kick :)

Oh man, that tomato soup looks amazing!! I wish I had some right now! They all look good, of course, but something about tomato soup is just so comforting! :) Hope you hubby is all better!

Oh my gosh those first two look delish! I'll have to try them. I made crockpot tortilla soup this weekend which is a staple at my house. Mmmm. I love soup.
ReplyDeleteMy favorite soup to make is homemade chicken soup! It's a little bit of work but so good! Basically any soup made from scratch though can win my heart :)

those soups look amazing! especially the southern chicken corn chowder. we LOVE soup, firm favourite's Cullen skink (like a fish chowder), French onion, sweet potato and chorizo and the list goes on and on...:)

ReplyDeleteI love to make soups too! I made a tomato, chicken & rice soup yesterday. My boy wants cream of broccoli for his birthday ... cream of celery soup is actually the only way we'll eat celery :).

ReplyDeleteLucky me....the soups tasted awesome....not sure which one was my favorite. I think its a tie between the tomato and the corn chowder. Hmmm, actually the bean tortilla was also good...I guess I can have them all again!
